Why do Catholics deny the rapture, and why do some say Paul's writings are lies?
Catholics (and all other non Protestant Christians along with many Protestants) deny the rapture because rapture theology was only introduced in the 1830’s by John Darby and spread amongst splinter Protestant denominations that broke off of the Protestants that broke off of the Catholics centuries beforehand.

Alongside this, some splinter groups of these splinters have come to the idea that Paul was some kind of Antichrist that completely changed the face of Christianity. Both of these doctrines are only possible because of the complete separation of these branches from all historical context in which their beloved Bibles and the religion that created it were born in. In fact, it is quite easy to see that Paul was acting in line with the rest of early Christianity, even when Peter wasn’t. When Paul rebuked Peter it was for acting hypocritically and failing to do what would be determined at the council of Jerusalem. Despite this their relationship would eventually seemingly be mended.
See Paul did not come after the time of the apostles, he was active at the same time as Saints Peter, Matthew, Mark, Mary Magdalene, and all of those others and more than this he was actively in dialogue with them becoming a foundation of the early church and, perhaps due to his religious scholar background, in afraid to call out what he believed was the mistakes even high ranking people like Peter were making. However what would come later is the Bible which would be codified across the councils of Rome, (382) Hippo, (393) Carthage (397) and Carthage (419). Decidedly after all of the apostles had died, Paul amongst them.
